Anya Tan, head baker and founder of Maison Levain

The Baker

Anya Tan.

Anya started Maison Levain in 2015 after a decade in finance and a stubborn obsession with sourdough. What began as a Sunday morning kitchen on Bukit Pasoh became, slowly, the studio it is today.

She teaches the way she learned — patiently, hands first, with too much butter and very few shortcuts. Every class is small enough that she'll remember your name and your last bake.

Trained at Le Cordon Bleu, Paris, and apprenticed under Apollonia Poilâne.
